After harvest, the grapes are pressed. Alcoholic fermentation then proceeds at a controlled temperature. The entire vinification and maceration process takes place in stainless steel tanks for about 15 days, with pumping over and punching down. After primary fermentation, the wine is racked into new tanks where malolactic fermentation takes place. Thereafter, a short period of aging takes place before bottling.
